There is no substitute for bacon, except bacon.
Also--pancetta? Really? First of all, it's like 6X as expensive as salt pork, and secondly, "these collards are cooked with pancetta" just doesn't sound right at all.

If you look at the ingredients of the processed "healthy" foods, I don't see how they are any better than real food that may have a little more fat or salt.

Bacon is smoked, pancetta is not. Both are made from the same cut of pork though.
