actually I plan to take a few classes at the local culinary school just to explore some new flavors

I want to take a knife class, an asian cooking and a french cooking class.

My gf lives across the street from Johnson & Wales here in Charlotte. I always wonder if the students are really interested in cooking or if they just didn't get into a 4-year college.

I graduated in the top 5% of my high school. I went to NC State for Marketing. I realized that I had no desire to do that for a living. I went to culinary school at Wake Tech and am now cooking for a living.

I absolutely love my job and love what I do.

I know far too many people who cannot say that.

^ That's awesome. I wasn't trying to crap on anyone who's been through it. Where do you work?

Maybe it's just limited to the people that I graduated from high school with. I can name a few that "took time off from college" after partying too hard and then deciding with their parents that it would be best if they didn't return and instead went to culinary school.

Burned out hippie I went to high school with apparently went to a culinary school in Vermont and now makes $texas running some organic hippie restaurant.

My sister is a graduate of the Wake Tech culinary school and is now working her way through the system at Outback Steakhouse. She's done her 6 months of front end duty and now has to do 6 months of kitchen duty and then she will become a co-manager of an Outback. She's enjoying it. If you're thinking about doing something like this then you really have to want to work all weekend and late into the night for the rest of your life.
