Chili is a good idea.We had a ton of ostrich meat for some reason when I was still living in Cary with my roommates. We had a bunch of ground meat, some roasts, and some steaks. Depending on how you spice it up, it can be a great low-fat alternative to beef. But it DEFINITELY depends on the spice, so get creative.

I was a broke college kid then, so we basically just marinated the meat for like 2 days in some steak marinade then spiced the shit out of it before throwing it on the grill.

we have here a creature who's only hobby in life is running... a lot. Did we expect it to be anything other than lean, tough, and/or flavorless?However. I want some - definitely.Why not season, put some garlic, worstershire sauce, maybe a small red onion (chopped) in it. Patty & make burgers?

holy mother of GOD this smells good... after a quick trip to teh teeter to get some peppers + an onion + beans + tomato stuff, we now have the makings of an excellent chili.ostrich chili = GREAT IDEAi'm going to let it cook as long as i can stand to not eat it]
