yeahi also have a sweet ass dutch ovenand from what i can tell, thats the way to goif you can bake it? BALLER, even makes the fat easier to skim off the topbut most times baking is just wayy wayyyy too much time to invest. the dutch oven cuts that time down on the stove

Simple, Easy, Tasty. My go-to Chili:2 teaspoons olive oil1 cup chopped onion1/2 cup chopped green bell pepper1 clove minced garlic3/4 cup water2 tablespoons tomato paste2 teaspoons chili powder2 teaspoons ground cumin1/4 teaspoon black pepper1 can garbanzo beans, rinsed and drained1 can red kidney beans, rinsed and drained1 can black beans, rinsed and drained1 can (14 1/2 oz) vegetable or chicken broth1 can diced tomatoesHeat olive oil in a large saucepan over medium-high heat. Add onion, bell pepper and garlic to pan; saute 3 minutes. Stir in 3/4 cup water and next 9 ingredients (through diced tomatoes); bring to a boil. Reduce heat and simmer 8 minutes.I usually let mine simmer a little while longer.Really yummy with a little shredded cheese and sour cream on top. With cornbread. YUM.

get a big hunk of cow... chop it up into chunks... grind some. get some fresh hot peppers... chop them up with an onion or two and cook them in olive oil till soft.dried peppers of choice (I use new mexican chilis)... simmer in water, blend to make chili sauce. get some bags of dried beans... soak them overnight. (i guess this should go first)cook veggies... add a bottle of beer... add beans... add chili sauce... add a large can or two of tomatoes (diced or whole or whatever)cook meat... drain fat (gotta be healthy about it)... add to pot.add some spices... i use cumin, pepper, garlic, etc. (a little different each time.)and then cook it on low for a few hours until the beans are cooked. (this will take the longest if you use dried beans, which are healthier than the canned mess.)

gah i guess im having problems finding cumini've heard chinese five spice will help it along, but thats a damn gamble imoand chipotle peppers are just smoked jalapeno peppers. i use fire roasted tomatoes and it seems to even out :-/ no offense to chipotle peppers

* 1 32-oz. can of kidney beans* 1 16-oz. can of black beans* 1 28-oz. can of tomatoes* 1 6-oz. can of tomato paste* 1 lb. hamburger meat* 1 cup chopped onions* 1 tbsp chili powder (I usually do this to taste)* 1 tbsp cooking oil* chinese all spice to taste* cumin to taste* dauce with Worcestershire sauce to taste* 3/4 cup watersautee the onions til they are clear. add the beef. cook til brown.add the remaining ingredients.I like your idea of adding chicken stock instead of water but I think I will add beef stock instead to keep the beef theme going. soups and chili are really hard to go wrong withi love trying other people's recipes for chili though just cause there are sooooo many different variations but yea with soups and chili you can basically just add whatever you think will taste delicious (i mean within reason obviously). but they are fun things to experiment with.

ben's mom makes good chili, just beans and meat. the sauce is sweet. her liquid is dr. pepper, and she uses canned tomatoes, red pepper flakes, and i think she does use this box of seasonings, but leaves "the yellow one" out. i don't know what the brand is. this chili kicks ass when eaten with fritos.

I just go in my spice cabinet and pick out savory and spicy and make it work...I don't note amounts, or even remember what I use. I have become my mother in that respect I do tend to do shit like a tiny pinch of cloves (in a whole crockpot) or ginger (fresh or powdered) - baking type spices in addition to the cooking type.On a side note, though I think chili sounds like an EXCELLENT idea right now I do seriously need to get some adobo paste [Edited on January 9, 2010 at 4:39 PM.
