mine's pretty plain, normally because i forget to buy extra veggies to throw in there but i normally do: ground turkey, canned tomatoes with onion and peppers, and black beans.

shitake mushrooms. kidney beans. beef. red wine. chili powder. onions. canned maters. sweet red peppers. bit of cayenne for xtra spicey.


then top it off with cheddar, sour cream, and some ritz crackers. ok. now I need to make chili.

premium chili btw.

my mom used to do it with nothing but tomato juice, tomato paste, beans, ground beef, and chili powder

it sucked

Yeah, a lot of moms cook like that.

Until recently, women have stereotypically been the cookers.

Nobody ever said they were good at it though.


Seriously, I ate so many bad meals at friends' houses growing up. Stay-at-home moms serving up partially frozen fish sticks and canned green beans.

My mom was an awesome cook which made me spoiled as hell when it came to eating dinner at other people's houses. I always politely ate it, but usually didn't like it

ground beef or ground turkey
kidney beans
bell peppers
onions
crushed tomatoes
tomato paste
garlic
chili seasonings (start w/a chili blend, add some of my own)
bottle of lager

Cook it low & slow. At least 2 hours in a pot, at least 4 (preferably all day) in the slow cooker.

Usually all I eat it with is cornbread. A slice with butter on the side, another to crumble up in the chili itself. Good eatin'.

These two are surprisingly important. Celery adds an important texture, I usually add it near the end. Sauteing the onions before putting them in is also clutch, really brings out more flavor. I usually use Vidalia onions.

I'm also a fan of several different spices, not just using chili powder. I usually have 2 different types of chili powder, cayenne pepper, cumin, and jalepeno or serrano peppers. It gives it a depth of spice.

Are you a Texan?

As to the spice mix, I usually go with something on the order of ancho chile powder, cayenne, cumin, oregano, salt, black pepper, and garlic powder. Tabasco and/or sriracha can be used for hottening up at service time (I like mine spicy, but not five-alarm spicy, so if wanted even hotter that's the way to do it)
