I am not a big fan of carrots. I end up buying them a couple to a few times a year. But I do eat them for often than that (restaurants, work cafe, mom's cooking, etc).

I do love however, the carrot dessert found in South Asia. It is made from slow cooking shredded carrots in milk until the milk disappears. Some pics:
