Let us post some butterbean recipes.Butterbean Hummus2 cups shelled butter beans in pods2 fat cloves garlic, chopped1/2 cup sliced green onions, including pale green parts (about one bunch)Juice of one lemon1 teaspoon lemon zest2 tablespoons fresh mint leaves, chopped4 tablespoons fresh Greek oregano leaves, chopped1/2 cup plus 1 tablespoon olive oil1/4 cup thick Greek-style plain yogurtSea salt and pepper to taste (at least 1/4 teaspoon each, as legumes absorb them)Put beans in a small saucepan with water to cover. Cook until tender, about 30 minutes at a steady roll, adding more water if necessary. Let cool in the liquid until ready to use or refrigerate until needed, up to three days.In a sauté pan, briefly soften garlic and onions over low heat in one tablespoon olive oil (two to three minutes). Do not brown. Drain limas and put into a food processor or blender with softened garlic and onions, lemon juice, zest, mint and oregano. Purée mixture, adding remaining olive oil slowly to incorporate. Fold in yogurt by hand. Season to taste. This reminds me that I need to use my pressure cooker. I inherited it from my grandmother, who also used it for butterbeans.

I love my pressure cooker! It was one of the first things I went out and bought after I got divorced. I used to use it all the time, but I just don't have a whole lot of time to cook anymore. The beauty of a pressure cooker is that it does lop lots of time off of cooking, and the food is better too.

i have never been a fan of butterbeans plain. they are good in stuff, esp brunswick stew, but i have never liked just butterbeans. i don't know why.

lol i know but how? i've had them my entire life cooked a variety of ways and haven't liked them unless they are with something else (corn, brunswick stew, etc). they just don't do it for me plain, i'm pretty sure it is the texture not the taste haha.

They're definitely good in stews and stuff...One thing that I have figured out is that, here in the south, there are a lot of vegetables that really go underappreciated because of how they're cooked. The de factor standard here is to cook the everloving shit out of them. Butterbeans definitely suffer this fate way too often.

^ that is the truth. i thought i didn't like squash for like the first 15 years of my life because of how my family cooked it (down to mush basically, w/ brown sugar and butter). tons of people like it that way, even my non southern BF, but i hated it, and that is the only way i knew squash. once i realized that wasn't how squash was always cooked it changed my life forever haha. because i <3 squash.
