My wife would put something on them and then bake them in the oven to make Kale Chips. They were pretty good that way.

All you really have to do is saute it. A little olive oil and some crushed red pepper, or sriracha, or perhaps balsamic. Salt and pepper. There are many other good things to do with it, but that's the easiest.[Edited on March 2, 2013 at 8:33 PM. Reason : If the leaves have a really big rib, might want to take that out. Can also cut up big leaves. ]

do baked kale chips stay crispy? are they even crispy when they come out?I've had kale at a whole foods bar before, they just steamed that shit with some raisins and cranberry. They were inedible, luckily they had a curry dish at the bar, it went down OK with the curry sauce.

So in Jamaica they cook a very similar dish to collards and kale called callaloo. They cook it with salt fish, and it is amazing. I thought that I would never turn down collards ever, but that salt fish just kicks it up a notch.
