This was the last soup I made, spiced pumpkin and yellow split pea soup. It was fucking yum. I would make that tonight but I'm out of split peas.

wow that soup does sound good.
i'm in the mood to cook tonight. i have some ground beef in the fridge, and frozen chicken thighs (bone-in) and some other chicken tenderloin/breast things.
i'm thinking about doing some mashed potatoes and maybe not a whole meatloaf but a mini-meatloaf thing. sounds pretty ho-hum, but i'm just craving comfort food.

anyone have any good mashed potato recipes/suggestions? same for the meatloaf.

Yeah, it was really good. It used Japanese pumpkin (the small green ones they sell at Grand Asia), and was spiced with saffron, ginger, and a hint of cinnamon.

Oh man, meatloaf DOES sound good. Maybe I'll make that tonight if they have a decent priced on ground meat.

I'm a skins on mashed potato girl. No creamy potatoes for me

potatoes, butter, milk, garlic (or garlic powder if you don't have the real stuff), and salt and pepper


melt the butter..toss in chopped garlic and saute, then put in the milk til it boils...pour on top of slightly mashed potatoes....mix/mash a bit more

Yep, classic shit.


If you want a twist (and have the ingredients), add in a bunch of fresh grated parmesan, romano, or asiago cheese, an egg yolk, and a couple splashes of half&half or heavy cream instead of the milk.

i have some evaporated milk, and a small variety of cheeses, and some regular 1% milk. i may try the evap stuff b/c i think it's richer than the other milk i have.

i wish i had a larger amount of garlic, i'd roast some and put that in the potatoes.

As long as that variety doesnt include american or velveeta cheese, any will work and probably be good. Evaporated milk will work too, just dont use a ton.

yeah none of those cheeses are found in my fridge, thankfully. thanks for the advice. i cook a bit, but sometimes just knowing the best way to make the classics are important.

today i've cooked, 6 boiled eggs, oatmeal with honey and raisins, chicken parm that went into a whole wheat sandwich (the sauce was left over from the stuff i made from scratch), and i'm about to pan sir 2 chicken breasts in olive oil with parm and pepper rubbed in, a baked sweet potatoe, and some steamed broccoli.

mmmm


I've also eaten a can of tuna, bannana, apple, grapes, a salad, and I will eat cottage cheese with whey before I go to bed.

oh yeah, my peri and post work out shakes, too

This was the Grilled swordfish, with haricot verts, on a parmesan potato cake with a ginger beurre blanc and balsamic reduction. I made for my folks last weekend

We had a birthday party at my place Friday night.



We were all pretty drunk at this point. I made veggie lasagna and some cannelloni.

I also made the birthday girl a chocolate cake with American style icing. Yum.

Boiled 2 Ramen packets + 4 servings of mixed frozen veggies + onion salt and pepper
Brought down to simmer and added in beef buillion
Meanwhile, baked a chicken, shredded it into bite-sized pieces, mixed in with noodles.

Should last about a week.

mmmm so i was bored today, so i tried something new. well, it's not a new dish, but i've never made a basic bechamel before, so i attempted it. it was okay, not the best ever, but i infused it with garlic, which was nice. i sauteed a chicken breast and shallots, actually let the shallots caramelize while the chicken cooked. steamed fresh broccoli and made fusilli, and topped my 'pasta bowl' with a bit of mozz and parm.

lunch and dinner today, probably lunch and dinner tomorrow too.
