Pickles do indeed perk up a boring sandwich. Also, while mentioned before, don't be afraid to try new toppings. I have six different kinds of mustard in my fridge right now, and I use them all. (yellow, spicy brown, amber beer, dijon, stone ground, horseradish) Plus I'll use barbecue sauce, or A1, Heinz 57...whatever sounds interesting at the moment. I try to keep away from mayo since it's full of bad fat, but some sandwiches do just call for it.

Excellent use of salad dressing on a sandwich. My favorite sub at Quizno's does the same (honey bacon club--the honey french dressing really makes it.)

i've said this before, but if you want a hot sandwich you can buy these little baguette hard roll thingies from like the bakery section of harris teeter, mozz cheese (fresh OR just the like sargento hunk kind, not the sliced already kind), artichoke hearts, spinach leaves, roma tomatoes, hummus, and probably adding like a spiced meat or prosciutto or even plain ham or something (i don't eat it with meat), then toasting (or grilling on the george forman).it makes a really yummy sandwich. you can really throw any veggies in there. cucumber would be a good addition. so if you have a toaster or a kitchenette at work, this is yummy. or if not, it is still good to make at home.

also, this may have been mentioned, but banana peppers are also good for perking up sandwiches. even a boring turkey sandwich can be revitalized when you switch up the bread (maybe try a sub orrrrr pumpernickel). or do it with 2 meats. and adding different veggies helps too...cucumber, green peppers, sundried tomatoes. i also love chicken salad sandwiches.
