I've never tried it, but I've heard of taking leftover fresh herbs and freezing them in an ice cube tray with a bit of water. Then whenever you need "fresh" cilantro -- or what have you -- you just pop one of the cubes in the microwave or some warm water and add it to the dish once it's thawed.

^^^^ I think it has been amply established in this thread that Thai food uses gobs of fresh cilantro, and by extension Vietnamese, Laotian, and Cambodian.

See ^^ to see what I meant.

I even said "Indian, Paki, etc", and when talking about food, THERE IS NO WAY you can fit in Thailand, Vietnam, etc in there.

^ Sure you can. Print off a map and arrange it so that Thailand, Vietnam, ect, are in the Middle East. Move Iran and Iraq to Southeast Asia.

^^ It is not about geography or locations of countries. It is about grouping by cuisine.

If someone says "I like Indian, Paki, etc, food", there is no way anybody in the know should think that Thai and Vietnamese food belong in that list.

And BTW, going by what you said, Middle Eastern food (Arab, Mediterranean) food is also quite different from Indian/Paki food.

Interestingly, and as expected, since Iran and Afghanistan are between the Arab countries and India/Paki, the food there (Iran, Afgh) is kind of a mixture of the two cuisines surrounding it. And similarly, Lebanese/Syrian food is a mixture of Arab cuisine and Greek/Turkish cuisine.

you can use cilantro roots too if you can find bundles with the roots attached. a chinese market typically sells this kind. the roots have a bit of an earthy flavor, its good smashed up in a sauce

Also, the flowers are mild and delicious. Use them as an edible garnish.
