are you going to melt the bleu cheese or just crumble it on top after the fact? here's a vote for melt. or try that pimento cheese like I said to switch it up.

the first time i cooked dinner for my gf ever (im a decent cook aka im literate and can read a recipe)

i gave her the choice of meal #1, a legitimate, time intensive but probably would end up really good meal, or meal #2, breakfast for dinner (chocolate chip pancakes, bacon, eggs, hash browns).

she chose meal #2 and it was awesome.

it was also the middle of winter, which helped I think.

I'd recommend a crockpot recipe, but it's probably already too late to start any of the good ones.

Unless you plan to eat at 10PM

If you go for pimento cheese, make an upscale pimento cheese using something other than cheddar. Gouda makes a good pimento cheese: http://gourmetgirl1.blogspot.com/2008/01/goat-gouda-pimento-cheese-sandwiches.html

Goat Gouda Pimento Cheese Sandwiches

1 cup grated Goat Cheese Gouda
1 jar roasted bell peppers (I use about 1/3 cup, chopped)
1/2 teaspoon fresh Thyme
1 tablespoon honey
1/4 teaspoon Nutmeg
salt to taste
1/3 cup home-made mayonnaise (look for it in the index on the right)

1. In a medium bowl, combine all ingredients and season to taste with salt.

I need to get on here more often...

Quote :
"-Steaks, probably tenderloin - i'll sear them in a pan and pop them in the oven. We both like them mooing so it's not too difficult. Crumbled blue cheese on top.

-Herb and Garlic Potato medallions

-Steamed Broccolli

-A bread of somekind from the local bakery

-Spinach leaf based salad, with walnuts, carrots, raisins, etc., with a rasberry vinaigrette.

-maybe a little cheesecake for dessert."

Take the steak a step further, and make it Steak au Poivre. Crust the tops and bottoms of the tenderloins in crushed black peppercorns. Sear and finish in the oven like planned. While they're finishing, Deglaze the pan with brandy or cognac (about 2 oz), add some beef stock or broth(about 2 oz) and reduce by half. Finish with a splash of cream and reduce until it coats the back of a spoon. Season with a little salt. Spoon over the steaks.

The potatoes and broccoli will be fine with that.

For the salad, i would use a mix of spinach and arugula. The added pepperiness will balance with the vinaigrette. Very Thinly sliced red onion would be good in it too. Enough to give a little texture and spice, but not enough to give you onion breath. Skip the carrots. Try dried cranberries instead of raisins.

^just be careful if thats how you cook it. It can get smokey and the pepper can make you cough, which would be kinda funny but may not be what your going for

^Dont scare him! But yeah, pay attention to the heat of the pan. You want to sear the meat, not burn the peppercorns.

And if you're a fan of seafood, ill give you a couple of recipes for the next date. One of which honestly got me laid that night.

And I am not even having to try anymore. But sometimes its fun to put the effort in as if I am, and see what happens.

So make with the sharing please.

Although cooking it in the pan is fine by me... but what's this bullshit about finishing it off in the oven?

dude

if youre not grillin, then duh you need a hot pan to sear the steak. everyone agrees on that, but you throw it in the oven relatively low for like 10 min (more or less based on size of steak) and you keep your sear, you get PERFECT medium rareness, you dont dry anything out, and the outside isnt burned. then you can deglaze the pan while the steak rests and jam out cool shit like the whole au poivre recipe.

there's nothing wrong with cooking steaks indoors

I ran out of propane one night and then had to bring my steak inside. It was essentially seared on the grill and then moved to the oven.

It was just disappointing. I need that flame-kissed flavor.

things went very well. time crunch became worse because of traffic... she didn't get home from work until 7, I didn't get over there until 7:30, and we didn't sit down to dinner until 8:30.

The Filet's wrapped in bacon au poivre went over very well... I ended up topping the steamed broccoli with a light cheese sauce, and made rosemary and garlic baby potatos in the oven. The salad was also a good call.

We split a bottle of Cab Sav, nothing too expensive, but i can't remember the name of it off the top of my head.

Overall her response was overwhelmingly positive. That's all I'm gonna say.
