There is a big difference between American Cheese Product (which I keep in the fridge for dog treats) and deli American Cheese (which I keep in the fridge for grilled cheese sandwiches). They shouldn't be confused. I'm a big cheese eater though, and usually have 5 or 6 varieties around for various uses.

I'm surprised that anyone could dislike cheddar or swiss.

I would like to clarify that deli-cut American cheese is a lot better tasting and doesn't make me want to throw up. I've worked in so many delis over the years that I've gotten a taste for the Land O'Lakes and some other brands of on-site cut cheese.

But I hate Kraft singles with an unrivaled passion.

when i was a kid i used to stay away from Swiss because in tom and jerry you always saw mice running around through the holes

so i think i thought that mice had been going around in the swiss cheese leaving their filth and avoided it lol

For the cheddar fans who don't got a lot of cheddar, Kraft has some "aged wisconsin" sharp cheddar that's pretty tasty/inexpensive.

This thread inspired me to look at few cheese websites, and man, I could really see myself getting into this stuff. The packaging of some of these boutique cheeses is stunning (and they sound really yummy, too!)!

Neither one is actual cheese. Deli american cheese is just made in a log, and sliced ad a deli.

^^^ Go to Earth Fare on the weekends and they have lots of samples of the cheeses. I love hitting that up on weekends.

^^ Yep, it's amazing how many people don't know that.

Great story about how cheese are made:

"food coloring" seems to suggest "artificial food coloring"
Cheddar is colored with natural annatto, from the annatto tree. Yes, that's a type of food coloring, but I'd say that cheddar is yellow because of "natural coloring".

Quote :
"Even though the term “American cheese” has a legal definition in the United States as a type of pasteurized process cheese, products with the label “American Cheese” are by no means identical. Depending on the additives and the amounts of milk fat and water added to the cheese during emulsification, the taste and texture of American Cheese varies, with some varieties (e.g. “American Cheese” and “American Process Cheese”) being very similar to non-processed cheese and other varieties (e.g. "American Cheese Food" and "American Cheese Product") being more like Velveeta or Cheez Whiz. The interested consumer should pay close attention to the wording used on the label of each product and to the ingredient list. (Refer to the definitions in the Sale and labeling section of the article on Processed cheese.)

The taste and texture of different varieties of American Cheese vary considerably, and mostly depend on the percentage of cheese versus additives used during emulsification. Varieties with lower percentages of additives tend to taste more like natural, unprocessed cheese. Depending on the food manufacturer, the color of the cheese (orange, yellow, or white) may indicate different ingredients or processes. Some manufacturers reserve the white and yellow colors for their more natural (i.e. fewer additives) American Cheese varieties. In other cases, the ingredients for white and orange colors are the same, except for the coloring. However, this does not necessarily mean that even these white and orange cheeses have the exact same flavor and texture because the spice annatto, which has a subtle but noticeable taste, is often used for coloring American Cheese."

i would still argue with you cheese snobs that american cheese is cheese, in a sense. kraft singles don't contain any vegetable oil. they're made from:
milk, whey, milk protein concentrate, salt, calcium phosphate, sodium citrate, whey protein concentrate, sodium phosphate, sorbic acid as a preservative, apocarotenal (color), annatto (color), enzymes, vitamin d3, cheese culture

while regular real cheese isn't made the same way or has all those ingredients, american cheese still has milk & enzymes...

it's kinda like chicken nuggets. they contain all sorts of other not so great things, but they're still made from chicken and are considered chicken. in my book at least.

i don't know. i like american cheese damn it.
