Barbequed pork.
6/18/2010 11:37:17 AM
^^That's what I was about to say.How is "needing ketchup, vinegar and pepper" any different from "needing vinegar and pepper"
6/18/2010 11:38:45 AM
^^vinegar all the way. not ketchup. ketchup.seriously, you cannot defend ketchup.
6/18/2010 11:38:46 AM

YOU CAN'T BARBEQUE CHICKEN, YANKEE FOREIGNER
6/18/2010 11:42:22 AM
6/18/2010 11:44:06 AM
yeah, but they CHOSE ketchup, out of all of the other flavors out there.
6/18/2010 11:46:50 AM
Lexington style. Yum.
6/18/2010 11:50:18 AM
^^And you CHOSE vinegar.I like the taste of the meat -- I don't mess it up with vinegar. You must not like the taste of the meat, because apparently you still need vinegar to make it taste good.(yswidt?)
6/18/2010 11:50:42 AM
Ken's parents are from MA and their idea of bbq isn't NC's version of bbq. Just saying. /Yankee talk PS- I heart Yankees.
6/18/2010 11:53:51 AM
you people make it seem like Lexington style BBQ has this thick red sauce all over it. It's not KC Masterpiece "BBQ Sauce" like you'd find in texas or memphis. It's a runny sauce very similar to eastern vinegar based sauces just cut with a small amount of ketchup. i mean come on.
6/18/2010 12:01:53 PM
I bet a bunch of you couldn't even tell the difference in a blind taste-test....
6/18/2010 12:15:02 PM
you think i've never been to fucking lexington and had barbecuei know what the goddamn sauce is likethe ketchup makes a differenceand it's not a positive one
6/18/2010 12:22:19 PM
I heard that if they catch you putting ketchup in your BBQ at Ole Time they kick your teeth in and permaban you.[Edited on June 18, 2010 at 12:38 PM. Reason : s]
6/18/2010 12:38:25 PM
the only thing that i really don't like is lexington style tends to lean more towards chopped pork, while eastern is pulled. Clearly i enjoy pulled more.and i'm an eastern fan in general, but spending my summers on the lake in lexington i've gotten used to their style and I do enjoy it too. but to digress, that is a grill son, not a bbq
6/18/2010 12:39:17 PM
the sauce in the bottles at ole time is horrible stuffif you catch them when the meat is seasoned properly it's fineif it's not spicy enough you're fucked because you can't use the saucethis is why we go to cooper's^ plenty of eastern places chop instead of pull ]
6/18/2010 12:40:20 PM
I usually use a little bit of the sauce with the black top and give it a quick dousing with the vinegar.
6/18/2010 12:41:40 PM
MMMMMMMMMMMM BBQ DO WANTomnomnomnomnomnommaybe we got some in my freezer at my parent's housedo not feel like driving to N. Raleighbut gotta do it(not just to see if we have bbq)
6/18/2010 1:47:08 PM
What's interesting to me is that people get so hung up on the sauce debate, while I find that the shoulder vs. whole hog aspect makes a big difference as well.

^Well, no one is talking about comparing ketchup to vinegar, so your point is meaningless.
6/18/2010 3:43:11 PM
^are you high???
6/18/2010 3:47:57 PM
The second ingredient in most ketchup is vinegar so at least those poor misguided fools to the west of us were trying. They just didn't get it quite right.
6/18/2010 4:51:31 PM
^^^Are both of you high?We're comparing:95% vinegar + 5% red pepper = easternwith 85% vinegar + 5% red pepper + 10% ketchup = lexington(numbers are estimates)We're not comparing:100% vinegarwith100% ketchup[Edited on June 18, 2010 at 5:08 PM. Reason : ]

I'm pretty certain that I could tell if something had 10% ketchup in it vs. none whatsoever.[Edited on June 18, 2010 at 5:04 PM. Reason : and i dunno where you're getting your recipes from]
6/18/2010 5:03:06 PM
...but also with the pork?I bet some of you wouldn't be able to tell...
6/18/2010 5:05:32 PM
gross it totally has more than 10% ketchup
6/18/2010 5:23:04 PM
Lexington style is good. Overall I prefer eastern but lexington is perfectly acceptable.
