^+1i'm thinking about boiling up a batch. can we get some basic directions up in here? how long do you leave them in the pot?

There are two aspects that I pay attention to.1. How cooked are they.2. How salty are they.Normally I'll boil them for about 2 hours and then start checking the tenderness every 30 minutes or so. Some will take longer to cook than others depending on how long they have been out of the ground, but you can expect them to take 3ish hours normally. I dump a bunch of salt in after the water is boiling so they are drawing in salt the whole time they are cooking. How much salt is a bunch? I don't really know. I'd measure it, but I'm on my last pot right now. I'd guess 1/4 cup.Once they are cooked to the proper tenderness you can take them off the burner and let them soak until they reach the appropriate saltiness.Once they are done you can put them in freezer bags and toss them in the freezer. As you want them throughout the year just take out the freezer and boil them for a few minutes. You can add salt at this point if you didn't put in enough during the first cooking. If they are too salty it's no problem...Just boil them in water alone and it will take some of the salt out of them.

we started the boil 2.5 hrs ago with about 2 gallons of water and 2.5lbs of peanuts... been simmering since then. We added a quarter cup of hot sauce and 6+ tbs sea salt. The few unshelled ones are tasting pretty good and the shelled ones are starting to be salty and spicy. Seems like this is going to be a good batch! can't wait to eat a good share of them in less than an hour
