well, it could be a reason some organs are "inherently" disgusting. because some of them typically smell like fecal material even after washing billions of times.

haha well hopefully you're buying tripe that has been thoroughly cleaned. I've never experienced an off smell when cooking tripe, but I also don't buy green tripe.

^ This. I've definitely had good, not smelly tripe before. One case where green =/= goOnly offal I've never messed with/tried is intestine, and mostly for the poop reasons stated above. Though I have friends and family that have had it with good results.

If you like tripe I think you would like intestines. Personally I can only do the upper intestines. I've had one or two times with lower intestines that were not good. One of my favorite dishes that uses cow intestines is this:It's the intestines, flank steak, tendon, cabbage, bean sprouts, garlic, scallions, etc cooked in a Korean-style spicy garlic sauce.

Tendon is difficult...I wonder if you need to slow cook that portion or if its just cut so fine that its more of a flash fry for texture...

I think I found the sauce for the above pic today at Grand Asia. So excited to try it tomorrow! They didn't have intestines tonight so I got tripe to go in it instead.

i have seen tripe on every shopping trip since i can remember going to grocery stores decades ago.have never bought or tasted it.will buy it soon.
