I do thanksgiving (and christmas and easter) with both sides of the family, and there's about 25-30 people that come to each. So yeah we have a crapload of different foods and there's pretty much any thanksgiving food you can imagine.

I love my mom's cooking, but my favorite thing at holidays is Rainbo Dinner Time Rolls. They barely even count as food.

I am one of those occasional freaks who has never had stuffing for thanksgiving. We make turkey dressing instead. Same idea, but more of a bread pudding casserole with turkey stock (saved from last year's turkey) and the innards of the current year's bird. It is nice and puddingy in the middle with the outer layer being super crisp from baking. It is my favorite food ever. I don't need my Thanksgiving bread dish to be pulled from the fowl nether-regions.
