ive decided to get back into cooking, which is something that i love

right now, ive got roasting in the oven

rosemary and olive oil vegetables (red onion, yellow bell pepper, zuchinni, will add tomatoes later after roasted, and its simmering)
gonna grill some portobellos,

plate portobellos, cover with roasted vegetables.


it smells immaculate in here

i was having trouble finind the original "where's the beef" photos so i guess this will work. SOunds tastey and all but where is some steak in all this veggieness? and no mention of potatos

a LOT less. Of course, it doesn't help that he's always the one to pay

It's a lazy dinner, but right now I've got chicken breasts marinating in a ginger sauce, and I'm gonna do up some green beans and almonds, and maybe a salad. Also one of those lipton pasta sides (if anyone's got an easy, comparable [or better] from scratch recipe, plz to tell. I would love to make that from scratch, but I suck at ideas for starchy sides )

cooking now, got the pasta started.

roasted eggplant pesto stuffed tofu steaks over linquini and a basil tomato sauce..

made the pesto and tomato sauce earlier

nt really sure what im doing, and kinda winging it, but i think it'll turn out ok

will report back

I made strawberry banana nut bread, but my dog ate them all before anyone besides myself could try them.

he said they were pretty good.

I'm probably going to eat a bowl of pasta with a scoop of this cheese sauce I made and a scoop of this goop my roommate and I made with TVP and brown rice

we call it nutrition food

oh and a salad

mmmmmm so i made potstickers a good while ago, and the recipe was pretty huge, so i froze a bunch of them. i decided to make soup with them tonight.

used:
48 oz of ht chicken broth (yeah, homemade would have been better)
equal amounts (1 tbsp) of minced garlic and ginger
equal amounts (2.5 tbsp) of soy sauce and rice wine vinegar
8 oz container of mushrooms julienned
however many wontons i had frozen

it was REALLY good! mm leftovers too.

-use a box white cake mix for the base... made two layers white, added instant coffee to third layer - looks really nice when plated!

-poked holes in cake and poured a few teaspoons of a strong coffee and coffee liqueur mixture over each layer

-filling is mascarpone cheese, coffee liqueur, and confectioner's sugar

-frosting is heavy cream whipped with coffee liqueur and confectioner's sugar

It is. Its lady fingers soaked in espresso and some kind of liquer, usually coffee, or some kind of brandy. layered with some sort of mascarpone filling. There are a bajillion ways to make the filling. Ive seen it as simple as folding in whipped heavy cream to folding in a zabaglione and italian meringue

Oh man

spinach noodles
a tomato sauce with sauteed onions and carrots that was VERY tasty
cubed (sorta) chicken sauteed with rosemary, lemon peel, onion, and fresh rosemary and basil

The only reason there's not a picture of it is because I was HONGRY

i went simple and went with an eggplant pesto pasta with the eggplant pesto seared squash, onion, zuchinni, onion, cubed tofu, and sliced mushrooms.
