monday was chicken quesadilla's with salsa/ranch dipping sauce... and I'd cooked the chicken in some tequila and lime. Tequila smells awesome when it's cooking btw.

tuesday was chicken in a rosemary/garlic/thyme/white wine with sauteed mushrooms and asparagus and corn on the cob.

wednesday was homemade meat sauce on spaghetti followed by buy one get one desserts at the Symposium in durham

tonight I'm going to take it easy and eat leftovers.

Last night I made sun-dried tomato polenta with spinach, onions, bell pepper, garbanzo beans and tomatoes with corn on the cob. 'Twas yummy. Tonight looks like leftover pizza.

i cooked hamburgers

i diced up some onion and garlic and mixed that in with the meat then used salt pepper and cajun seasoning to season it

I'm trying to figure out what to make today. I have some sweet potatoes I should probably use. I've been wanting to make something with lentils for a while. Falafel and tzatziki sauce also sounds pretty good. I don't do well with choices.

I made these sweet potatoes as a side to some pork chops once and they were tasty:

2 lb sweet potatoes, peeled and cut into 3/4-inch pieces
3 tablespoons extra-virgin olive oil
3/4 teaspoon salt
1/4 teaspoon cayenne
1/2 teaspoon finely grated fresh lime zest
1 tablespoon fresh lime juice
1/4 cup chopped fresh cilantro

Put oven rack in lower third of oven and preheat oven to 425°F.

Toss sweet potatoes with 2 tablespoons oil and 1/4 teaspoon salt in a shallow baking pan. Arrange potatoes in 1 layer and roast, stirring halfway through roasting, until tender, about 25 minutes total. Stir together cayenne, zest, and remaining 1/2 teaspoon salt in a small bowl. Whisk together lime juice and remaining tablespoon oil in a medium bowl, then add potatoes. Sprinkle with cayenne mixture and cilantro, stirring gently to combine.

That sounds yummy except for the satan's weed.

I think I might go with http://allrecipes.com/Recipe/Pumpkin-Curry-with-Lentils-and-Apples/Detail.aspx and use sweet potatoes instead of pumpkin.
