Today, some chicken salad

* 6 slices bacon, cut into 1 inch pieces
* 1 cup chopped celery
* 1 green bell pepper, seeded and chopped
* 1 onion, chopped
* 1/2 pound cubed cooked ham
* 1/2 pound cubed cooked chicken
* 1/2 pound cubed smoked sausage
* 2 (14.5 ounce) cans crushed tomatoes, with liquid
* 2 cups beef broth
* 2 cups chicken broth
* 1 teaspoon dried thyme
* 2 teaspoons Cajun seasoning
* 2 cups uncooked white rice
* 1/2 pound salad shrimp

DIRECTIONS

1. Heat a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon pieces with a slotted spoon, and set aside. Add celery, bell pepper, and onion to the bacon drippings, and cook until tender.
2. Add the ham, chicken and sausage to the pot, and pour in the tomatoes, beef broth and chicken broth. Season with thyme and Cajun seasoning. Bring to a boil, and add the rice. Bring to a boil, then turn the heat to low, cover, and simmer for about 20 minutes, until the rice is tender.
3. Stir in the shrimp and bacon just before serving, and heat through. If you use uncooked shrimp, let it cook for about 5 minutes before serving."

i cooked a couple chuck eye steaks per alton brown's frying pan method

they were awesome. had some pierogies and sauteed mushrooms with it.

wow, how do you catch squid? are they drawn by the smell of fear?


i have to host another ridiculous dinner party and sleepover on saturday, so today i made 2 apple pies and 3 quiche for that, and red curry chicken to eat for dinner

its like close to 6 but i haven`t slept, i`m all fucked up about what day it is.

Today has been a bagel and sandwich kind of day, but yesterday I spent quite a bit of time in the kitchen. I made mini meatloaves, homemade mac n cheese, and sweet corn.

Salmon tagliatelle* with sauteed zucchini, aubergine, tomato, garlic, dried Italian herbs, English mature cheddar, and mozzarella. Downed with some nice red grape juice.

*Brand name "Pirro". They make amazing authentic Italian pastas. The flavoured ones are out of this world. I have tried the following:

Salmon tagliatelle (3% dehydrated salmon) ---> Simply amazing... like eating fresh salmon!
Porcini tagliatelle (3% dehydrated porcini mushrooms) ---> Very earthy in taste... lovely!
Squid ink tagliatelle (3% dehydrated squid ink) ---> Very interesting flavour... unique!

Haven't tried: (cuz I haven't found them yet)

Asparagus tagliatelle (3% dehydrated asparagus)
Olive tagliatelle (3% dehydrated olives)

And their egg pastas are so amazing, you will eat a plate full without anything on them... same with their flavoured ones as well.

I did a "Throw whatever is in my pantry in a pot" stew/chili...

1/2 gigantic onion, diced
4-6 cloves garlic, diced fine
~1 tbsp butter
19 oz ground turkey breast
1 yellow bell pepper
1 can (1.75 cups) red kidney beans
1 can (1.75 cups) black beans
1 can (2 cups) Trader Joe's "Salsa" refried beans
~2ish cups low sodium chicken broth
~2ish cups crushed tomatoes
1 tbsp cornstarch
~1/4 cup Trader Joe's Enchilada Sauce
lots of salt, pepper, red pepper flakes and paprika

I threw the onions in with butter, let them cook down quite a bit. Added the garlic, and a minute or two later, added the ground turkey. It was sorta still frozen and I didn't realize that until it was in the pan, so I tried my best to break it up. Added a bit of broth, and spiced it up, and let it go for a few.

Added the diced bell pepper and the black and kidney beans. I then kept eyeballing broth and crushed tomatoes until I felt like it seemed good, added the last of my enchilada sauce from the bottle. And then I mixed in the refried beans to thicken it up a bit. I just let it cook until I felt like it was thick enough (added the cornstarch at the end because I was getting impatient).

YUM!

every weekend, i cook a big batch of something to eat throughout the week

a few weeks ago I did a big batch of hummus. last week I made a ham

can't decide what I should make this weekend. i think it's between a lamb shank, a corned beef brisket or a huge batch of pierogies
