there's awesome parts

there's shitty parts

you can walk into borgata, never go anywhere else, and have a ballin' ass good time, a wonderful casino, with beautiful women.. hell they have a calendar for their cocktail waitresses... to whom they still provide implants at the cost of the company.

however, they've got the best clubs in the city too, so you'll have to deal with that.... element

the blowback fades will be in heavy in a few weeks when tiesto plays there

if you want to see shitty, broke ass degenerates, just walk into any casino

people so addicted they'll piss themselves so they dont "miss the jackpot" at their favorite slot machine.

people so addicted, they're in foreclosure, can't afford food, but yet take markers out and shoot the bones

people so addicted, they'll lose big, and take a leap off the taj parking deck

the worst of the worst are around all casino.. the scammers, the sharks, the sharps, the squares, shifty mother fuckers that are the preying dregs of humanity

but this is any place with gambling

last time there, we paid a cabbie off and went "hooker spotlightin'" which was fun as shit

overall, it's a great place to have a great time, but just dont spend too much time

or go on the beach

unless you enjoy diry needles puncturing your flip flops

or rape under the boardwalk

i'm considering purchasing a tie clip and am wondering if that might be over kill.

if i do get it i'll likely go one step further and get a pocket square as well.

what are your thoughts on these things

im not really a fan of pocket squares

seems like everyone wants to be on mad men

tie clips im ok with mostly for utilitarian reasons, just keep it simple and dont fuck up the placement

yeah widener is like, 4 miles from where i live.

i dont know anyone that goes there currently, but know someone who graduated from there and enjoyed it.

about all i know about the people or the school is that the have a very active social group that tags along with some of the happy hour/networking groups that i sometimes get a few drinks with.. it's one big networking circle jerk, but a good way to meet people.

IF YOU DID move here, i'd introduce you to all my friends.

it's a merry band of 50 or so transplants that all have lived here less than 5 years and are about our age... so party too much and stuff.

contemplating transferring?

^this year, it looks like probs only bonnaroo and hopefully ACL.

was going to do coachella, roo, sasquatch, and acl but someone went off and scheduled a wedding during sasquatch, and i decided to go to aruba instead of coachella after the lineup came out.

there wasnt anything there that really made me want to go. the undercard had the most draws, but it was full of bands that i have or will be seeing in the next few months, all for ~$15.

the rumors for the roo lineup this year are pretty wild though, it's so topheavy i dont see it being true at all.. but we'll all find out tuesday.

i only made one of the november phish shows. t'was good, but i thought knoxville was superior

i dont think i have a single favorite to prepare, i dont do many things often enough to have a favorite. half the time i just go on the fly with what looks the best at the market that day.

i guess my favorite protein to work with is seafood.

also, i dont think i have a "best" dish really. depends on the audience really.. if it's a dinner party that has people who also cook, ill do a technical dish (last one i did a angel hair carbonara souffle, was only responsible for one dish). if im cooking for people that are foodies but dont really know much about the process, ill focus more on big flavors(last one i did a lobster risotto with an herb crusted tenderloin that i made a balsmic/herb butter for the steak.. kinda a surf'n'turf play). but i really like, bring your own hors d'oeuvre to a cocktail type parties... individual bites where you can really go off on everything... for these ill usually make things with sauces too... (some of my favorites for these are seasonally dependent.. for winter ill go more rustic with pork/lamb meatballs with toasted pinenuts with a romesco sauce, autumny i like doing spinach/mushroom empanadas with an aoli, summery fresh a crowd pleaser is a citrus crab salad on belgian endive leaves, topped with a supreme of blood orange.)

i've not had ramen as a meal since college drunk-o-nights, but have used the raw noodles as crunchy toppers occasionally.

i'm actually not hosting the party, my buddy is. we've got 35 people coming, all bringing food or beer, so the spread will be interesting. I'm bringing a savory potato salad... with pork belly. the host is cooking up as asston of ribs, and potato salad goes damn well with ribs. and who doesn't like pork belly?

Here's the one I'm using, tho I'll surely deviate somewhat like I always do

1 teaspoon canola oil
1/2 cup garlic chives
3 small egg whites
1/4 cup heavy cream
1 tablespoon fish sauce (optional)
Salt and freshly ground black pepper
4 ounces lump crabmeat
4 ounces lobster claw meat
1/2 cup chopped cilantro
1/4 cup bias-cut scallions, white part only
1 package Shanghai-style wrappers
1/4 cup peanut oil
1 cup chicken stock
1/2 cup white wine

Dipping Sauce:
1/4 cup soy sauce
1/4 cup lime juice
2 tablespoons sambal
2 shallots, diced
2 tablespoons bias-cut scallions, green part only
2 tablespoons sesame oil
1 teaspoon sugar


Heat the canola oil in a nonstick pan, add the garlic chives, and sauté until wilted. Remove the chives from the pan and set aside to cool.

Place the fish, 2 egg whites, and cream in a food processor and blend until smooth. Add fish sauce and season to taste with salt and pepper. Transfer the mixture to a chilled mixing bowl and fold in the crab, garlic chives, cilantro, and scallions.

Lightly beat the remaining egg white in a bowl. Keep the wrappers covered with a damp paper towel or plastic wrap. Place a walnut-size spoonful of filling in the center of each wrapper, fold in half over the filling to form a half-moon, and moisten the edges with egg white. Beginning at the right, pleat the top fold of the wrapper. After each pleat, pinch the dough to join it with the bottom fold. Proceed until the dumpling is fully sealed. Repeat with remaining wrappers, keeping the finished dumplings covered to prevent drying out.

Blanch the dumplings in a large pot of unsalted boiling water for 2 minutes, then remove with a slotted spoon and set aside to cool. (The dumplings can be made about 5 hours ahead, but must be tossed in a little canola oil before refrigerating to keep them from sticking together.) Heat 2 tablespoons peanut oil in a large nonstick pan, add some of the dumplings, and sauté, pressing down on the top of each dumpling to flatten and cook the underside until it is golden brown. Do not turn. Remove from the pan and repeat with remaining dumplings.

Fill the pan with a layer of dumplings, golden-brown side down, and deglaze the pan with half the chicken stock and wine. Cover, and let the pot stickers steam and warm through. Remove to a platter with a slotted spoon and repeat with remaining dumplings, adding stock and wine as necessary. Place warm pot stickers on a plate and serve with the spicy sesame dipping sauce on the side.

self taught.

there's a culinary academy in philly that offers community classes for people to get formal training that don't have a desire to go into it full time, but rather just lean/refine home technique etc.. i've contemplated signing up a few times. kinda want to skip the intro class but dont really know.

there are several people on this board that are excellent cooks.

yeah i watch fn to an embarassing extent.

i like the show chopped, only to see what people can think of and their process under pressure situations.. however, i think they really exhaused the talent pool worthy of such a show in the first season.. they're really scrapin' lately with some bums.

as for an individual chef who has their own show, tyler florence is great. every recipe i've made of his has been outstanding.

this, i totally understand.

i think the reason why i really really really hated my 2009 was that 2008 was filled with so much travel, then just damn near nothing in 2009. fortunately, where i live, i can get to baltimore, dc, nyc, ac, and others on a quick train ride, or something. it doesn't suffice, but can take my mind off of just wanting to get away.

although, the past like 6 months, i've taken a habit of just getting into the car and seeing where i end up. end up in some random random place, seeing some random things, and wondering how i got there.

turn the phone off, no gps, just see what kind of nowhere a tank of gas and some road drinks can take me to.

getting completely lost can in effect solve some of your problems.

idk.

but i've been looking at a bunch of possible trips, i've got a thing now where i want to go to thailand or someplace in southeast asia, buy a cheap motorcycle, and just see what i can see.

a guy i met in korea did something similar and i've been following him on facebook

he's ridden from korea, is currently in israel. his pictures through india made me really jealous.

idk though

with a real job, it's hard to be able to just up and go.

UGH THAILAND IS WHERE I WANT TO GO NEXT

ugh. i want to go there and never return

this guy i met in vietnam was from ireland. a little older like 27 or 28. he was a lawyer but got laid off and had been traveling the world for 9 months. he'd been in south america, australia, ALL over asia like everywhere not just to the main cities either.

sigh

so if i have like 10 days for spring break but i want to travel for like 4 or 5 of it where in the US shall i go?

i should have enough ffm for a domestic ticket somewhere

but theres so much drama cause then i have to find someone to go with and they won't wanna pay for the ticket and like going skiing is even more than a cruise

BLAH

suggestions?

i'm thinking NYC. because i know peeps there so that would take out the $$$ for staying somewhere.
