I honestly can't think of anything good you could cook with cucumbers.

Except pickles, which seem like a lot of trouble and are cheap as hell anyway.

but i don't eat that shit. cucumbers taste like watermelon rind to me.

or Giada had a yummy salad on everyday italian the other day. it was like shaved cucumber, asparagus cut into like one inch pieces tossed with dressing which was just fresh lemon juice (from half of a lemon) salt, pepper, and olive oil. topped with some kind of romano cheese. not like the normal kind it was a kind that looked like parmesan. shaved.

she also has an italian lentils salad that looks really amazing too (again with cuc as a main ingredient)
