I was recently enjoying a fine meal at Ruckus 2 when I noticed a rather large container on display full of a cloudy yellow liquid. Upon hearing the words "limoncello," "everclear," and "three dollars" I decided to give it a shot. The experience transcended familiar boundaries of enjoyment and touched upon the ethereal...long story short I've embarked upon the journey to make my own.After doing some homework online I constructed my game plan and gathered the necessary ingredients:- Two fifths of everclear- 19 supple lemons, organic (no pesticides in the skin)- Sugar - WaterYou can find some great material on proper limoncello brewing with our old buddy google so I won't get into details, but here are some pictures:the setupthe zestingthe wait beginsObviously my glass jar is a little overkill but it'll work and there's plenty of room for adding volume. I plan on letting it sit in the pantry for at least two full months before I add the sugar and water, maybe longer if I can successfully forget about it. I'll jostle it every day or every couple days to facilitate the infusion, and I'll update with pictures periodically. oh okay...this is my first attempt at it so I'm not sure how strong it'll come out. I've read that using dat 190% alcohol is preferable but it takes longer than using 151 or lesser proofs if you want to let it mellow into something more tasty. Some people let it sit over a year, but I don't have that kind of patience.

^^ i will probably let this sit two months before i open the jar for any reason...at that point I'll probably boil up the sugar/water and mix it in, then let it sit for another couple months.
