and yes, a leash is important. can't have that bastard sniffing out the truffles and then eating them! you need to have a leash so you can choke a bitch that tries to eat your truffles.

my chef told me the industry folks use dogs instead of pigs now. the pigs were eating all the truffles.

you mean like so many other foodstuffs where we decided the real, wild thing was just too much work, and gave up all kinds of flavor and character in the name of convenience?

...Other than values like there, there's probably a good financial or logistical reason as to why we don't farm them. And I'm glad for it.

Can you give an example of something from the wild that cannot be reproduced through cultivation? The only thing I can think of with an appreciable is farmed vs. wild-caught seafood, but there are some definite advantages to farming seafood (as well as some drawbacks).

They do in NC. The agriculture department was actually giving people grants a few years ago to start their own truffle farms here. But in NC we use truffle dogs because they won't eat the truffles
