All I got from the other thread is that South is something to do with mustard.

smithfields is eastern, by far

generally speaking,
eastern: heavy on the vinegar and red chile flakes
western: tomato-based with some vinegar

Well, BBQ is this vinegar sauce chopped pork dish served primarily in the Eastern 1/3 of NC.
Anything else is a lie.
The fake stuff (often referred to as "Lexington Style" or "Western NC Style") is made from the cutest kittens and puppies you've ever seen.
And vomit.
Especially the recipes that have tomato based sauces or mustard in them.

I've usually found that people who bitch about "styles" like Western and so forth probably haven't had good versions of that particular sauce.

in reality, if they are prepared well, most different style bbq's can be good... however true eastern nc style bbq is "real" bbq, and by far the best tasting.

Texas beef brisket is good as shit, but I don't call that bbq.

um no. eastern is apple cider vinegar, red pepper, and other spices. no ketchup, no tomatoes.
