I like to prepare mashed cauliflowers in lieu of mashed potatoes. It's a very satisfying substitute.

Brown Butter Roasted Cauliflower Soup

1 medium head cauliflower, cut into small florets (about 6 to 7 cups)
2 to 3 tablespoons extra virgin olive oil
2 to 4 tablespoons water
Sea salt to taste
Garlic or garlic powder to taste

Boil cauliflower in water until very tender, about 10 minutes. Drain and place in a blender or food processor. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached. Season with salt or other herbs and serve immediately.

Nutrition
Per serving (About 11/2 cups/155g-wt.): 110 calories (80 from fat), 9g total fat, 1.5g saturated fat, 3g protein, 7g total carbohydrate (3g dietary fiber, 3g sugar), 0mg cholesterol, 190mg sodium

If you omit the olive oil, it has fewer calories, but olive oil is a healthy fat and good to incorporate in your diet.

Bake cauliflower with a sprinkle of lemon pepper on top. After you take it out of oven sqeeze some fresh lemon on top and enjoy!

I've got some of those forks. They're pretty normal-sized.

Tasty broccoli:
florets
some diced red pepper
mash ~2cloves garlic, add salt, and some pine nuts and add to like 2T EVOO in a bowl. Toss peppers and broccoli in all this, throw in a dish, and pop it in the oven at 350 for like 10 minutes. Pull out, put some fresh grated parm on top and OHMYGASM
