depends on what's coming with them...

if there's bacon and grits, I like over-medium.

If its hashbrowns or nothing else, hard scrambled w/ cheese.

I prefer them over easy, but I am terrible at making them myself (I always break it) so I usually only get it that way when I'm out. I'm going to try Alton Brown's trick to see if that works.

Otherwise, scrambled w/ a bit of milk, salt and pepper. OR, a I make a mini omelette w/ bacon & cheese and slap it on toast for a bacon egg n cheese sammich*.

*this is how i decided to make em today all b/c of this thread--thanks tww!!

Poached or hard boiled. Any other way gives me dry heaves.

fried hard. i'm talking about NO runny yolk. not even a little runny.

i get them scrambled when i get eggs from a restaurant because i don't trust them to cook them all the way.

Poached eggs are heavenly if you like a firm yolk but don't like the way the white is hard on a hard boiled egg.

Two eggs, over easy-light, with bacon, hash browns, and whole wheat toasted lightly.

^^ does not compute... properly poached eggs should have a runny yolk.

[Edited on December 6, 2009 at 11:37 AM. Reason : poached hard = brunch cook's nightmare.]

Every time I ask for poached somewhere, I get a firm yolk, but not quite as firm as a 10 minute boiled egg.

But if I ask for hard boiled, I end up with yolk running everywhere.

I love eggs pretty much any way. I think my breakfast favorite is scrambled soft with a little milk and sometimes cheese. Or as an omelet. As a snack I eat them hard boiled.

Fried, over medium I guess

I don't want the yolk runny, but a little bit soft is great.
