go to the grocery store

buy some taco shells
shredded cheese
make pico de gallo with lime juice, cilantro, tomatoes, and onions.

I heat the cheese in the shell for 1 minute in the microwave.

WINNAR!! and less than $10 and quick. It will last quite a few meals.
