Need me some good muffin recipes!

Two of my favorites:

Snickerdoodle Muffins

2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup butter, melted
1 cup sugar
2 eggs
1 cup milk
2 teaspoons vanilla

1/2 cup sugar
1 tablespoon cinnamon

Preheat oven to 375°F. Grease muffin pan.

Mix the dry ingredients together in a bowl. In another bowl combine the melted butter, sugar, eggs, milk, and vanilla. Stir until combined. Pour the liquid ingredients into the dry and mix lightly with a fork.

Fill the muffin cups with batter. Dump a bunch of cinnamon sugar mix on each muffin. Use a knife to swirl it around.

Bake for 15 to 20 minutes or until a skewer inserted into a muffin comes out clean.


Lemon Blueberry Muffins

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
juice and zest of 1 lemon
1 egg
1/3 cup milk or buttermilk
1 cup fresh blueberries
2/3 cup brown sugar
1/4 cup all-purpose flour
2 tablespoons butter, softened
1 1/2 teaspoons ground cinnamon

Preheat oven to 400°F. Grease muffin pan.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder.

Place vegetable oil into a 1 cup measuring cup; add the egg, lemon juice and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries and lemon zest.

Fill muffin cups right to the top. Combine brown sugar, flour, butter, and cinnamon with a fork. Sprinkle over muffins.

Bake for 20 to 25 minutes or until a skewer inserted into a muffin comes out clean.

And I add vanilla, and flax seed (both ground and whole)

HIIIIIIIII

i just bought some store bought bran muffin mix. actually it is honey bran. my mom used to make some baller bran muffins but i'm not at home so i can't go through her recipes. does anyone have a good bran muffin recipe?

i know people will think i'm gross but i like plain bran muffins. spread a little cream cheese on them and then they are extra nomnomnom. but i like them plain too.

all i could find at the store was honey bran mix. so i'm going to try them out. not holding my breath since all you need is the mix + milk but we'll see.

I like plain bran muffins too. They remind me of brown bread.

Try this recipe, raisins are optional

2 1/2 cups all purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
2 cups toasted wheat bran (about 4 ounces)
3/4 cup raisins
1 cup boiling water

1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
1/2 cup honey
2 large eggs
2 cups buttermilk

Preheat oven to 400°F. Line 24 muffin cups with muffin papers. Stir flour, baking soda and salt in small bowl to blend. Combine bran and figs in another bowl; mix in 1 cup boiling water.
Beat butter in large bowl until creamy. Gradually beat in sugar, then honey. Beat in eggs 1 at a time. Beat in buttermilk alternately with flour mixture in 3 additions each. Mix in bran mixture. Divide batter among lined muffin cups.
Bake muffins until tester inserted into center comes out clean, about 20 minutes. Turn muffins out onto racks and cool completely.

do you use baking cups or just pour directly in the pan?

and if you do use baking cups are you supposed to grease those too?

my last batch i used baking cups and the muffin bottoms kinda stuck to the paper

I can't find the recipe I use, but this one off the internets is pretty close:


SUNSHINE MUFFINS

2 c. flour
3/4 c. sugar
2 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
2 c. grated carrots
1 c. peeled, grated apple
1/2 c. raisins
1/2 c. chopped nuts
3 eggs, slightly beaten
1/2 c. vegetable oil
2 tsp. vanilla

Combine the 6 dry ingredients. Stir in next 4 ingredients. Combine eggs, oil, and vanilla in a separate bowl; stir to blend. Stir into flour mixture - only until blended. Spoon into a greased muffin pan OR line with paper baking cups. Bake at 350 degrees for 20-25 minutes. Makes 12.

Oreo Muffins

Ingredients

* 1 3/4 cups all-purpose flour
* 1/2 teaspoon salt
* 1/2 teaspoon baking soda
* 1 teaspoon baking powder
* 1 cup granulated sugar
* 3/4 cup milk
* 1/3 cup sour cream
* 1 egg
* 1/4 cup margarine, melted
* 20 Oreo cookies, coarsely chopped

Directions

1. In medium bowl, combine flour, sugar, baking powder, and salt, set aside.
2. In small bowl, combine milk, sour cream, and egg.
3. Stir into flour mixture with margarine until just blended.
4. Gently stir in cookies.
5. Spoon batter 12 greased 2 1/2 inch muffin pan cups.
6. Bake at 400 degrees F for 20-25 minutes or until toothpick inserted in center comes out clean.
7. Remove from pan, cool on wire rack.
8. Serve warm or cold.

Blueberry Muffins

* 1-1/2 cups flour
* 3/4 cups sugar
* 1/2 tsp salt
* 2 tsp baking powder
* 1/3 cup oil
* 1 egg
* 1/3 cup milk
* 1 cup fresh wild Maine blueberries (accept no substitutes)
* zest of 1 lemon

Streusel Topping

* 2 tbs brown sugar
* 3 tbs flour
* 1-1/2 tbs chilled butter
* 1 tsp nutmeg

To make topping: Cut butter into dry ingredients until the whole business looks like coarse meal.

Preheat the oven to 450. I use the extra big muffin pan for my muffins, but go ahead and experiment with normal sized muffin pans. I spray the pan with non-stick cooking spray and then fill 5 cups with paper liners designed for extra large cups.

In a small bowl, combine flour, sugar, salt and baking powder. In a second bowl mix oil, egg, milk and lemon zest. Add the dry ingredients to the wet ingredients along with the blueberries and fold together until just combined. Over mixing is bad. Pour this into the muffin cups. I fill mine right up to the top so they get that big mushroom top, which is also why this only makes 5 muffins. You could choose to fill them less and make an even six, but that's your call. Sprinkle topping on batter.

Put a little water in the empty muffin cup so that it doesn't overheat and pop in the oven for 25 to 30 minutes or until a toothpick comes out clean. Let cool about 15 minutes before eating, if you can wait that long.

Really it's just personal preference. If you don't want to use baking paper use silicone muffin pans or make sure to grease the pans before pouring the batter in.

Cake is usually lighter and a dessert.
Muffins are quick-breads like banana bread or biscuits.

here's one im going to make in the morning

2cups plain flour
1/2 cup + 2 tbpsn sugar
2tspn baking poder
1tspn baking soda
1/4 tspn salt
1 cup buttermilk
2 eggs
3 tbspn unsalted butter, melted and cooled
1/2 cup raspberries
1 cup diced peaches

oven to 400, butter up muffin tin

sift flour, 1/2 cup sugar, baking poder, baking soda, salt

another bowl whisk buttermilk, eggs, and butter until blended

make well in first, pur and stir quickly into batter, dont overmix

fold in fruit, spoon into cups, sprinkle top with the 2tbspn of sugar

bake abt 20 min, for passes toothpick test

cool for 10 on rack
