grilled salmon is good but i've had some much salmon lately that i avoid it now.
i've never eaten amberjack. gave one to some folks on the pier once who claimed they would eat it and it was full of worms.

wahoo steaks on the grill are good. i've grilled king mackerel before and that wasn't bad. cobia is probably my favorite fish for the grill. they don't call it lemonfish for nothing.pretty much grill any fish that's firm enough. trout, flounder, etc are ok if you put them in foil with herbs and lemon on the grill. bigger stuff like reds, black drum, rockfish, sheepshead gets baked in a sort of pseudo fish stew.

Ok seriously amberjack?In some places you'd be laughed out of this thread for that comment. Some places actually think it is a decent fish, but hardly anyone would call it the best fish on the grill. It is edible, IMO, once you cut around the worms.Yes, they are full of white, stringy worms.Wahoo, cobia, tuna, and mahi are favorites of mine. Mahi is my top choice mostly because that's the best combination of good and what I catch.

,All amberjacks do not have worms. The larger the fish, the more likely it is to have them, and it also depends on location. Amberjack caught in the gulf rarely have worms...but those caught on the east coast almost always do.The worms are usually in the tail section, so if you cut that off, you're usually ok. Then you have to cut out or around the bloodlines....possibly bleed the fish....and then you are ok.Some people ignore the worms and cook them out.....I personally chose not to cook and eat visible worms.EDIT: ^unless you have cleaned an AJ and seen the large, white worms that fill the lower section, then you can't really talk.And yes, I don't like eating worms.[Edited on April 15, 2010 at 4:09 PM. So youre freaked out by a few worms? i didnt notice any but I do recognize the concept of symbiotic relationships and if if the worms are as consistent in amberjack as you say they are than I would imagine its not a symptom of any sort of problembut thanks for omparing it to mahi mahi, i liked the amber jack because it was a little flaky and it soaked up the marinade i put on it while not tasting blandsory for the double post, somethin wierd happened.i looked it up and it says worms occur in the tail section, I had fillets not a whole fish[Edited on April 15, 2010 at 4:09 PM. Exactly....when I am fishing it and with people that know what I'm talking about, it's dolphin.When I'm cooking it for non-fishers, it's mahi.

^^^no, they're the same thing from what i've seen. it's hard to tell a lot of times on the pier b/c a lot of folks don't know what they're talking about. i watched a guy keep a bunch of little puppy drum one time b/c he thought they were croakers. wouldn't listen to me when i politely tried to tell him different. he got a ticket for every puppy drum in the cooler later that day.but yeah, pompano/butterfish are good eats.[Edited on April 15, 2010 at 4:34 PM. haha, if the fish has fins that look and feel like pins, they are pinfish...also, if you are catching then right and left while surf fishing, chances are they are pinfish...

fwiw lots of fish have fins like that. sheepshead comes to mind.and google shows that the term "butterfish" can refer to different fish depending on location. all i can tell you is most of the time when i heard someone call a fish a "butterfish" on the pier, they were referring to what a lot of NC anglers would call a pompano.local fish names are tough to figure out.[Edited on April 15, 2010 at 4:42 PM. we were in the fish really thick surf fishing somewhere between cape lookout and drum inlet and a guy with us fucked around and caught two pompano on little pieces of red delicious apple.

While I really enjoy catching fish that I can eat...I really think it's fun to see all the random things you catch too. I always have my camera with me because you never know what is gonna be on the hook.
