Golden Delicious shouldn't be that soft, though I do believe Honeycrisp are superior. It's unfortunate that Honeycrisp are $Texas at the grocery store, though we did get some for $.99/lb at the farmer's market last weekend.Mealy? No, that's Red Delicious. Cannot stand the texture of those things.

Any apple that is firm and tangy or tart will serve you well. It's also usually good to use a mix of apples when baking imo. I'd say do a mix of honeycrisp, mutsu, pink lady, etc. Or do what I do and ask the people at the apple stand for their culled apples. They're the ones that are too small/lumpy to be sold as grade A apples but are perfect for baking purposes (cheaper too).

I feel like I should get the headaches checked out. I have been told by my regular doctor that it could be a pollen thing and one of my friends told me her allergist said fruit at times mimics pollen from trees and that is her problem. I also think the natural sugar content might be too much for my type I diabetes. I guess I will continue to have headaches because I can't stay away from these apples.
