you could take a drive to an older small town and walk the streets of their historic downtown. About to head down the mountain myself and spend some time in Bryson City with the lady.Disc Golf is a good idea too if she is remotely athletic.

I stayed at the Charleston Inn with an ex-gf in Bryson City a few years back...great place, plenty of good hiking around, not too far from some rafting, would recommend

Walk / bike around at the outdoor part of the Museum of Art. If you start at the museum, you can walk all the way across the beltline and onto Meredith College's Campus. State Fairgrounds Flea Market Schenk Forrest Umstead State Park
