The best sausage I ever had was when I lived in Pender county. There was a little store near my house that made their own stuff and they would make sausage sandwiches with whatever you wanted on it.[Edited on November 17, 2011 at 10:45 AM. Reason : Z]

I make sausage gravy with Neese's all the time. I like the hot, but extra sage is good too. The trick is to brown the sausage and put the flour on it while it's browning so the grease soaks it in. Then you mix in the milk and butter and it won't clump I also like putting tony chechere's cajun seasoning and it tastes like Bojangle's Wish I had a pic.
