Nope. I like pizza and I like sauerkraut but I can't see one thing appealing about sauerkraut on a pizza.Finding a way to put corned beef on a pizza wouldn't be too bad.
11/28/2012 5:12:55 PM
Not for me. It's an interesting idea, but I don't think I'd be interested in eating a reuben pizza

dont use sliced corned beef make the shape and texture similar to like short rib on a pizzaeither way i dont think it will translate to a pizza as much as i love reuben.[Edited on November 28, 2012 at 5:17 PM. Reason : d]
11/28/2012 5:16:38 PM
The only reason I ask is because I've had 3 customers ask about one in a relatively short amount of time.I agree with everyone that this would not be a big seller ]
11/28/2012 5:18:36 PM
this is seriously, about the only unappealing pizza idea ive ever heard ofand i've eaten pizza in several asian countries where they just put all sorts of weird shit on there for gigzgg

The wife and I made a Reuben pizza once. While good, it's super rich and makes you want to die after eating it. Thumbs down.
11/28/2012 5:26:00 PM
Why not sell it by the slice as part of a pilot program?or give out samples, etc..
11/28/2012 5:27:52 PM
I think if you use a recipe that doesn't include tomato sauce and a pizza dough that isn't seasoned with a bunch of salt and garlic it'd be worth a try.I think if it was just dough, corned beef, shredd swiss cheese, and thousand island then it'd be good. Of course at that point it's less of a pizza and more of a giant open face reuben
11/28/2012 5:40:03 PM
the best pizza idea ive seen is Chicken & waffles pizza. instead of pizza sauce they used a maple syrup sauce. They still used cheese and used chopped up bits of fresh waffles and fried chicken strips as toppingsbest pizza ever[Edited on November 28, 2012 at 5:57 PM. Reason : you should totally rip that off]

I've had reuben pizza, was pretty good. Not very hard to deconstruct for a pizza. They put warm sour kraut on the pizza after it had cooked instead of cooking it on the pizza. I wouldn't mind it cooking on there, but I could see it maybe causing things to get too soggy? Don't skimp on the dressing.

the grilled rye bread is what makes a Reuben goodhow do you plan on replicating that?
11/28/2012 6:47:30 PM
how about a pastrami pizza.bc a reuben pizza is dumb.
11/28/2012 7:22:01 PM

11/28/2012 7:36:27 PM
why do people come on here asking folks' opinions and then argue the responses?

The reuben is one of my favorite sandwiches. However, I don't find the idea of a reuben pizza appealing at all.My reasons:-Thousand island used in place of pizza sauce would be (as mentioned) too rich, and likely overpowering.-If the sauerkraut is put on before baking, it may burn. If you put it on after baking, it doesn't have that baked taste. Either way, you'd have to make sure it's nearly dry.-Rye bread is *essential* to a reuben. Pumpernickel is acceptable but it is a variety of rye at the end of the day. A reuben pizza would not be a giant open-faced reuben, it would be an open-faced reuben on completely the wrong type of bread. Even if you could somehow make a rye crust, it would still be flat and the wrong texture unless you could somehow make a rye deep-dish crust. No thanks.

^ Yeah the dressing was too rich. She made a rye dough with caraway that was really good for the crust. Drained the shit out of some sauerkraut and put it on halfway through baking so it would get toasty but not burnt. For the effort, we both agreed a reuben is better than a reuben pizza.

I can avoid the sauerkraut from getting burned by making sure it has the right moisture and place it under 2 layers of cheese. The cheese will brown, the kraut will not.I can cook the pizza plain, with just sauerkraut, rye seasoning, and corned beef... and add the thousand island in a swirl on top of the pizza after it comes out of the oven.]

I am a mad rueben eaterAnd I think this idea has promise, but the dough has to be rye-based...with a base of thousand island, some real swiss melted over slow-cooked corn beef and smattered with krautI would eat the shit out of that
11/29/2012 12:52:58 PM
when I worked at Asheville Pizza we used to make a reuben pie off-menu for employeesThousand Island baseswiss (and smoked gouda for lolz)chopped corned beef, onions, krautcarraway seeds on the crust
